Vietnamese Broth with Wagyu

Ingredients

  • 5 lb Wagyu Bones
  • 1 lb Wagyu Round/Sirloin Tip
  • 1 Yellow Onion, Thick Julienne
  • 1 Stalk Celery, Rough Chop
  • 1 Carrot, Rough Chop
  • 1 Inch of Fresh Ginger, Sliced
  • 1 Inch of Fresh Galangal, Sliced
  • 8 Cloves Garlic, Smashed
  • 1 Star Anise
  • 1/2 Cinnamon Stick
  • 3T Fish Sauce
  • 1T Black Peppercorns
  • 1 Sliced Jalapeno (optional)
  • Salt, Lime Juice and Toppings, To Taste

Directions

  1. Roast bones in 400 degree oven until golden brown.
  2. Place in large stock pot and add water just to cover. Add remaining ingredients.
  3. Simmer 6-24 hours or until desired flavor is achieved. Strain and reserve broth.
  4. Slice round thin against the grain. Season lightly with salt or fish sauce. Add to simmering broth along with veggies as desired.
