Ingredients
- 5 lb Wagyu Bones
- 1 lb Wagyu Round/Sirloin Tip
- 1 Yellow Onion, Thick Julienne
- 1 Stalk Celery, Rough Chop
- 1 Carrot, Rough Chop
- 1 Inch of Fresh Ginger, Sliced
- 1 Inch of Fresh Galangal, Sliced
- 8 Cloves Garlic, Smashed
- 1 Star Anise
- 1/2 Cinnamon Stick
- 3T Fish Sauce
- 1T Black Peppercorns
- 1 Sliced Jalapeno (optional)
- Salt, Lime Juice and Toppings, To Taste
Directions
- Roast bones in 400 degree oven until golden brown.
- Place in large stock pot and add water just to cover. Add remaining ingredients.
- Simmer 6-24 hours or until desired flavor is achieved. Strain and reserve broth.
- Slice round thin against the grain. Season lightly with salt or fish sauce. Add to simmering broth along with veggies as desired.
